You can use Gpay on xiaomi.eu rom with unlocked bootloader. On my MI8 it works perfect.- musialeks

Put downloaded zip file in phone storage. Run phone recovery ( vol up + power button). Go to install and choose zip file with TWRP- musialeks

How To Install A Custom ROM on Xiaomi Mi 8 - Xiaomi.eu MIUI 10 Beta
I have same issue. Try to install official rom on fastboot mode (vol- and power ) using miflash. Next install TWRP and run it. Wipe all data from phone by TWRP and reboot it now you can install rom as described in this video. After all make wipe again and reboot your phone. It should normally start.- musialeks
