You'll still be getting OTA updates on stock ROM even if your phone's bootloader is unlocked . You have to use a recovery with OTA support like Orange Fox to be able to flash Incremental OTA Zip Files . For locking bootloader use Mi flash app . Just a reminder - This is not your Stock MIUI...
