There is a workaround for that, it involves rooting + lsposed though, can set the dpi for systemui to 440 with app settings reborn, it has a few issues on its own, but usually works fine regardless of dpi you use in settings.

adb/fastboot are different things, try fastboot devices to see if the phone shows up

Xiaomi.eu doesn't have that feature as Settings - lock screen - power menu access accomplishes the same thing, need to unlock the phone before one could turn it off. Also holding the power button for 10 seconds reboots the device anyways, password or no.

Factory reset just deletes user data, whatever rom is installed on it, stays.

If you're rooted, Swift Backup is decent for backuping apps with data to the destination of your choosing. For data like images, usb cable and copy/paste. Backing up with TWRP since Android 10 has been finicky at best.

If you were to root, you could install storage isolation module, can white/blacklist locations an app would see, including the gallery app. Seems like overkill for just one app, but there is a way.

While rooted, there used to be a file in /data/misc/wifi called wpa_supplicant.conf to display passwords for existing wifi connections. It hasn't been present anymore, what happened to it, is the data stored using some other means now?
