    Video players have often it's own brightness settings, did you check it? Sometimes you just have to swipe up in left or right side of the screen. Which app do you use for video? And also make sure it is really a video file, not a music file...

    If you want to delete them, turn on the Root. Then open Total commander and go to /system/apps and there delete undesired apps, but do it with caution and check first which apps are safe to delete. Afterwards just reboot your phone and voilà... those apps are gone.
