    How can I limit the charger to not use the fast charge 3.0 feature? I don't use the original charger but its still use fast charge and the charger get heat up. I can't find any original charger to buy now. Could I make a "normal" charge instead of quick?

    Yes, you can. You need to flash TWRP for Mi9 and then follow the instructions in the main post. In my opinion its a shady move. Now, if you want to have the latest security and stuff you need to buy every year a new phone. But guess it's better than one update and then discontinue the device.
