how to flash stock rom?

I have xiaomi.eu MIUI 12 stable.
I want to know how to flash back to stock rom.

Can I use the updater app and just flash the stock rom or should I flash twrp again and then flash stock rom from twrp?

Any other better method?
Also does it lock bootloader or not?

To flash stock rom, u need miflash tool
And a fastboot rom for your device.
Flashing stock ROM is done using your computer

As for the locking of bootloader, when using miflash there is an option to "clean all and lock" (bottom right of miflash window)
If you select this option your bootloader will be locked.
