You can't. This isn't the place for modding, try XDA.
In any case, we use Roboto variable font while Global ROM uses non-variable Roboto font.
Turn off "System-wide variable font" in Font settings, if you want Global-like font.

@nArkus You have Xiaomi.eu Stable ROM (= custom ROM based on China Stable ROM, so I guess that's what you meant before ^^).

It's in phone's settings => Wallpaper and personalization => Fonts => Under the "Roboto" button
