Privacy concerns

Hello,
Is it possible to reach a privacy level close to a LineageOS ROM (ungoogled and without any of the Xiaomi trackers)?
And is it possible to uninstall Google applications?
I had already tried to use a LineageOS ROM, but the number of bugs was too high.
I've already seen a few threads posted on the forum on this subject, but none of them answer my question.

Today google play protect warned me about privacy issues with the MIUI forum app and asked me to remove it.
(Pot - kettle)
I stopped unlocking (MIUI) phones since RN3 and had many more MIUI phones without problems. + The hassle of unlocking was not worth it. Current Mi9 pro phone works great but perhaps I turned into a fanboy.

Tho this post triggered me to take another look into all this.
