Unlock bootloader, download the ROM you want (from sites like Xiaomi firmware updater or MiFirm) and flash it via fastboot. Done. Now relock your bootloader with miflash_unlock.exe (if you want to).

Genuine question. I once did steps 3 and 4 while experimenting with my RN12, and after I locked BL it ended in a semi-hardbrick that I was only able to rescue via EDL. Is signing out the key to not getting a bricked device (so it's related to FRP)?

Nothing big, but I have encountered that most apps that try to display the phone model don't recognize the Phone Name (most show "unknown" or "N/A"), although they do recognize the brand (Xiaomi) and they also recognize the model codename (shennong). I'm still on at learning about that stuff...
