Question regarding ROM update

I have a xiaomi mi 9 running the version MIUI 10.5 by xiaomi.eu 9.6.13 | beta (weekly). When I try to update it in the setting it says that I am either up to date or there's a server issue.

My question is, can I manually update (to which version, I don't know) without losing any settings/apps on my phone or I have to install a new rom which overwrites everything?

In theory you can update to whatever newer weekly you want (I believe support ended in October or November last year). Keep in mind you have a really old version, and you may need to format data in TWRP if you have issues after the install.

I guess my best bet would be to update to the latest 12.5 stable, since that's a huge jump in version I should probably format data in TWRP as you suggest.
