hi. you have to do factory reset (wipe data and cache) for a downgrade. i would recommend to do full twrp backup first and save it to your conputer in case you want to go back to your current setup.
if you are still on a xiaomi or any inofficial vendor rom you have to go through the same process as i described above. first unlock bootloader, install twrp, install xiaomi.eu rom.
if you allready have a xiaomi.eu rom now just download any recent version from here and install via twrp.

in twrp you press "wipe" button. in next screen it will say "factory reset wipe data cache davlik". swipe right for factory reset. afterwards install rom via install button in twrp.
you will lose all appdata such as gameprogress, settings...!!!

if you want to install stable rom you have to wipe data partition in twrp. otherwise you'll have errors. thats all thats different from installing a new weekly rom.
i'd recommend to do a twrp backup of all partitions first in case you want to switch back to your current system.

If you want to use xiaomi.eu roms you first have to unlock your bootloader officially.

thats normal on Redmi 3/pro. the only way to boot into recovery is to turn of the device and restart pressing all three buttons at once (vol up and vol down and power).
just installed via OTA on Redmi 3 pro.
It's still impossible to access TWRP from Updater app (always reboots to system since months).
Flashing from TWRP manually worked flawlessly like usual.

in the window that supersu opens try the way to not update via twrp first. for me it works in most cases and you just have to reboot once after Installation and no need to go to recovery
hi. i had no problem with just wipe cache davlik before and after flash in twrp as usual (coming from 7.3.9 on IDO)
i recommend to do a full backup in twrp anyways in case you want to go back to miui 8 or something goes wrong

so far no bugs on Ido (redmi 3pro) coming from 7.3.9 via dirty flash.
i also tried the video app. i can't confirm app crash as some reported.
only annoying things are the new button functions (i hope that someday short press menu to open menu will be available again ;))...
