Did you download the correct file? OpenGapps.org and then x86_64 - 5.1 - pico If yes try to download and flash it again.

We aren’t in xiaomi’s original Roms don’t waste your time that’s why we using TWRP.

Just flash the file with the TWRP and after the flash make a wipe cache and dalvik/ART in TWRP only nothing else.

Why you can delete the folder it just a zip file. All the zip programs can do this I am using winrar.

I am using this Rom last days and is good no problems but I removed the folder whetstone in the zip file before flash.

In fastboot mode after the TWRP flash give the command fastboot oem reboot recovery

I made a reboot and the sensors doesn't work again. Hope that is software issue and not a hardware problem as the device is new I am not sure.

You won’t lose anything but last Roms have some problems better flash 6.4.7 its way better.

It wasn’t necessary to remove the wetstone from the zipfile in the 6.4.7 its working with no issue. But wetstone is useless you won’t have problems don’t worry. Its good Rom enjoy your tablet.
