Question from a newbie :)

Hi guys, My question may look stupid but here it is: I would like to buy a Xiaomi 8 SE. Since it seems you can use english language on the chinese version, it seems you also can download the Google Play Store and uninstall all chinese apps you dont want, what is the problem with this version...
