I had also some trouble wiht GPay, but I found an instruction on XDA. When I tried this I can pay wiht GPay since weeks without problems. Hope that will help you too.

I found that at XDA. I did it for my normal Mi 8 and GPay works again. Hope it works also for your Mi 8 pro

Try to find an older vesion of GPay at apk mirror. Deinstall the one on the phone, disable auto install for GPay in Google Play store and install the old version. I did so and will try tomorrow to pay wiht my phone.

As the headline says, do have Xiaomi phones under Android 9 the possibility to activate WIFI calling. At the moment it is under Oreo 8.1 not possible, I think. In this time, it is a must have in my opinion.
