If your phone is a Chinese model (you did not provide any information about it, or the ROM), you cannot unlock it with the standard methods. You either need an exploit to force it, or you need to be in China with a high level account on the Mi Community forums.

There is no confirmed solution to unlock updated chinese models outside of China.

Even without OTA, normally, the install process does not require to wipe your data when updating. You only need a clean install the first time you install the Xiaomi.eu ROM. You won't get a fully transparent OTA. At best, you will be able to download the ROM from the updater, and then update...

It is still possible to unlock the phones in China. The information about unlocking is available on the official website. and it was discussed on multiple threads on Xiaomi.eu 2 years ago when Xiaomi updated the conditions. Maybe they could add all the conditions to unlock a phone in the FAQ...
