How do you update roms from the previous version to latest version without losing user data? I tried to flash the new rom using TWRP without reformating and it was ok but will it cause any issues?

Hello all, I just gotten the mi 11 ultra. It is now on global rom 12.5.4 RKAMIXM. Bootloader unlocked, usb debugging all enabled I tried flashing to xiaomi.eu rom by booting into fastboot mode using the latest TWRP, I am stuck at waiting for device. I have copied the .img rom to root folder...
