When we get the Android 11 update, should we use TWRP or fastboot? Is there official TWRP for Poco X2 android 11? After updating we won't be able to use the old TWRP?

I've just started using MIUI eu, and maybe I'm kind of lost, but isn't latest stable "xiaomi.eu_multi_HMK30Pro_V12.1.3.0.RJKCNXM_v12-11"?
If so, this build is on android 11.

They are talking about the "K30", not "K30 Pro"...
