Yeah I'm thinking about switching to stable, as I get weird bugs with every update. I can just wipe the data and flash the stable rom, right?

Yup, just wipe and flash the stable rom as easy as that. I'm also using stable cuz the bugs as not as obvious on the weekly rom. But the important part is the battery life is much better compared to weekly rom. Hopes this answer your question.
I've never ever gotten 7 hours of sot. Max was like 5, I think? But I guess that I use my phone more intense than regular users do.
This is on stable or weekly ?

I also think that on the weekly build the battery is drained way too fast and the phone heats up a lot
