Chinese vs Global & Interconnectivity

So i'm using the K60 Ultra for over a 1,5 year, running the global xiaomi.eu rom from Patreon with the unlocked Bootloader.
Recently i got a new xiaomi tablet with interconnectivity and I love how it works with my wifes phone with the sceen sharing and stuff.

Now this function is not working on my current ROM, 2 reasons that could affect it:
-My bootloader being unlocked (most likely, also suggested by the creator of the ROM)
-Or because the current rom is based on the Chinese Rom, including the Interconnectivity apps are not global.
In her Stock rom phone I can also see our Xiaomi vacuum, but on my phone I don't even see that.

So I can decide to just forget about it, or perhaps decide to go back to Chinese Stock ROM....
But before I can decide I need to know:

- Would interconnectivity work between stock China ROM and my other stock Global devices? (with all locked bootloaders) *If this does not work there is no need to go further*
- If I revert back to chinese rom and install HyperOS, would my phone be permanently locked (no unlocking bootloader in the future anymore)
- Will I be able to install the google apps (play,wallet,photos etc and having it backup up with my google one etc, I read that you need bootloader unlocked to install it)
- Will payments with GPay work like usual with the official China rom. (With the global one and the EUmodule fix there is also no issues.)
- What are the other downsides of the chinese rom (i remember google assistant not working, or just not the voice activation)

I knew a lottt more when I switched roms more then I switched anything else, but currently i'm not fully informed anymore.

Goal: Working phone, Gpay, Google apps and have this Interconnectivity working.

Losing root does not matter don't use it anymore and can't care about chinese goverment stories :p
Hopefully someone can help with some clearance on it.

Interconnectivity between devices when at least one of the has an unlocked bootloader will not work. It has been like this at least since HyperOS 1.0, maybe even sooner for some devices.
The rest of your questions are about official China ROM, so I don't know.
