Does xiaomi.eu only rom for best selling and expensive phones? Even on the redmi note 5, it seems strange that it is not for this phone. I know the conditions to be banned but I wanted to ask.

Xiaomi EU is depending on XIAOMI chinese rom release. You may ask them directly.
I have a REDMI8 in these days and the EU stable 11.08 available here is perfect. Try it while waiting for a weekly beta.

No one.
Redmi8 is stuck at Android9 and no chinese dev is out for building a weekly.
It will come with next Android release (10 or 12)
EU Stable 11.08 available here is good to go. It is for average daily use a fine rom. No ads and 12h display ON without any trick.

As you said, beta may be possible after Android 10. It is really good at stable V11.0.10 but beta contains a lot of improvements.
