I need format data to update stable rom miui 12.5 from stable 12.1.2 ? Or only wipe cache and dalvik ?

You don't need to do Format Data.
Just update, clear the cache and dalvik will be done automatically. But if you want to do it you can.
I did just like you wrote and system is broken, can't boot into it. I was updating from xiaomi 12.0.1 stable. What to do now? It goes to recovery or fastboot, depending on twrp installed.

System is broken maybe because you used an old TWRP (version inferior than 3.5) to install the latest ROM...

Yes, the latest Official TWRP for your device is a little broken for installing ROMs but you can use another TWRP based on the version 3.5 like twrp-3.5.A9-grus-geoanto555.img -or- twrp-3.5.2_9-1-grus-KudProject.img

Try to install the latest ROM with one of these custom recoveries and if it doesn't work, do a clean install (= "Format Data" button in "Wipe" menu of TWRP) then it should be good.

EDIT: Anyway it's recommended to do a clean install when switching branch (Beta <-> Stable).

;)

Thank you, but I was doing stable xiaomi.eu 12.0.1 -> stable xioami.eu 12.5.
I tried both recoveries you mentioned and the effect is the same, after installing, wiping cache/dalvik, restarting to system, it constantly goes to recovery. I have 70 GB of personal files (I guess it's on /data partition), I backed up most important ones, but I would rather not format it, if I'm not sure it will help. Do you have any other ideas? Maybe I will install different ROM than xiaomi.eu 12.5? Can I install 12.3? Or maybe global stable 12.5?

EDIT:
TWRP in backup menu says "Data (excl. storage) (24151MB)" and I see my user files are on /sdcard partition. I guess if I backup only /data and format it, then my user files are safe and only applications and their data will be cleared?
EDIT 2:
oh wait, my user files are also under /data/media/0
