Downgrade System Apps

Hello. I just installed MIUI in my MI MIX 3. Really liking it, but I realized from CustoMIUIzer that the rom doesn't come with the system apps updater. So I installed it and updated everything. But as consequence, lost a lot of the newer settings, and I can't downgrade them just by re-flashing the rom, as the apps stay in the latest version. What should I do? Already configured my phone and apps, so deleting /data and formatting everything ain't an option.

Go to each app's info and uninstall updates.
Can't do it. But I don't understand why reflashing the rom don't force the downgrade by overwriting the apps

And factory reset is exactly what I don't want to do right now

Clearly you don't know how Android works, but do some dangerous "tweaks" nonetheless.
When you update system apps, they are not overwriting the stock apps in system partition, they are stored in the data partition, like any user-installed app.
What geoorg told you are your only options.
