System apps are not updated manually

You can't downgrade that easily. As far as I know, the only solution would be to unlock your bootloader and install an older custom ROM, but I could not find any for this device during my quick search.

I don't think older MIUI 14 versions are available, if only because they were not compatible with the new GPay module. You can check the MIUI13 ROMs

No... don't overcomplicate things. As Gogocar62 said, you can use OTG USB or Fastboot. Hopefully, in the future, they will release TWRP that can decrypt for your device.
