MI 10 (umi) : performance is very good! Very snappy rom! Ram usage is way better. I only have this bug of the quick settings order get reset after every phone reboot (I have the problem since the first time I installed EU rom on this device (20.12.2 and 20.12.10) am I alone?

I meant to say : (make device in in appearing mode) Go to settings, Bluetooth, "Rarely used devices" (or anything that means this, my phone is in French I don't know how they went for the name in english).

I've never had this kind of issue with Bluetooth devices. Make sure it is in appairing process. If you don't see them in Bluetooth device list check the hidden device menu of Bluetooth settings

Try the reset Bluetooth option in settings (option is in the bottom which reset Bluetooth Wi-Fi etc)

I don't know if this is the same everywhere but in France now they sell EEA ROM (European GDPR Compliance) who has lots of GApps replacing Mi ones.

I might be wrong but you are not booting recovery from the phone recovery here, you just put your phone on fastboot then boot AnyFilesWhoHappensToBeTwrp.img from your computer. To be clear.
