TWRP for the Redmi Note 11 Pro 5G makes Wi-Fi to not work anymore on the latest 14.0.4.0 ROM

Yeah it was the same for me. I tried TWRP on this new version and the WiFi also didn't work. I guess Xiaomi changed something again in the ROM as this has already happened before. I suggest you flash back the boot.img from the ROM until TWRP has been fixed.

Do you have TWRP installed? I use the ROM without TWRP and my wifi works like it should.

Clear app data of the Weather app and the widget will work again. It fixed it for me!

You will never have strong integrity while you have an unlocked bootloader. You only need device integrity for Google Wallet.

After the rebuild of the ROM, the Weather app on the Redmi Note 11 Pro 5G is very laggy when scrolling and while opening/closing it. Already tried clearing app data but that just fixed the widget for me. Edit: it seems that the lag is caused by the clouds in the app https://streamable.com/trgrnq

The issue is related to the Google Play system not updating correctly and reverting back to the old version so that's why the device reboots twice.

If you are 100% sure that you are using the Redmi Note 11E Pro then the ROM is for you. Right now you are having NFC issues as you have different NFC hardware and are using a version of MIUI for Global Devices. The device you have is Chinese.

You should never lock your bootloader on a custom ROM. As @The System said that will brick your device and you will have to go to Xiaomi Authorized Service to unbrick it.

Now my phone says the July 1st update is the latest version. Could that mean that Google rolled back the update?

If the phone reset by itself that means that all your data is gone and we can't help you with recovering it

Are you using the Xiaomi EU ROM or are you using the Stock ROM?

Yeah it also happens when you do a setup on Stock Global. The Korean message is related so some sort of Service App that is probably made for the Korean market. As it's a one time pop-up I wouldn't worry much about it.
