First you have to rename Fastboot file to .TGZ extension then you will see all files.

Boot into TWRP make backup. then click on install select update file after installation wipe cache and dalvik reboot

Try checking option "accept all file types"

This is because stock recovery replaces twrp so you have to modify boot.img file of the rom. search miui official forum to use android kitchen and modify boot.img or use TWRP by Cofface
