I've searched a bit on it , and it looks like this :

In only says "wipe and reset" or "install update.zip" . Any other menus i'm not seeing ?

I have the TWRP recovery flashed, but when I try to restore a formerly backuped image, it says that the mounted partition is read-only, I really don't know what to do.

I don't know a solution,and maybe there's a simple one , but if not, one thing you can do: post this problem , including pictures - some some popular android place like reddit.com/r/android - to make noise about xiaomi blocking users even after giving unlock code.

If it's solvable , someone will see and help . If not , the bad publicity to xioami may force them to make it solvable.

If you have the bootloader unlocked and TWRP installed, yes it works.
If dont i think you can use your MI acount and like that you can save and restore it.
