I have a Xiaomi Redmi Note 2 mobile phone with this ROM installed:
MIUI by xiaomi.eu 8.0 | Stable
8.0.1.0 (LHMCNDG)
I think it is a EU type ROM.
Which is the latest EU ROM from this type?
How can I install it ? I do not want to reinstall my apps, I want to upgrade.
I would not like to install a new installer to my phone.

Click on ROM DOWNLOADS on top of this page.
Choose to download either a weekly or a stable ROM and click on the link accordingly; copy the download file into your device.
Install TWRP on your RN2 using Fastboot Install Method (if not installed yet); follow the instructions from this page:
https://twrp.me/devices/xiaomiredminote2.html
Boot into TWRP, press install and select the downloaded ROM file; when done wipe cache and dalvik, reboot and wait...

I would like to know the exact file name to use on my phone.
I need stable ROM which is NOT rooted, because my banking app doesn't work on rooted mobiles.
I would not like to change MiRecovery to TWRP.
Any idea?

Your phone model is HMNote2 (hermes).
Official rom or xiaomi.eu rom are not rooted by default, so pick either one.
You will first need twrp recovery before installing xiaomi.eu rom.
