the memory of my k30 is crypted, ok but now i want to decrypted it. i have canceled password, locked screen, i have reset all the phone.... nothing works.

Why do you want to decrypt the stock rom?
You can decrypt it with format data in twrp when you will be going to change the rom to EU.

because yesterday when i have done an update by OTA with the Rom from xiaomi.eu my phone was brick, i have a white screen when the phone reboot.

Pershaps it s because it s a cryped phone. to unbrick it, i have done wipe data with fastboot.

EU OTA works well...normally
The best is to reload the full rom from download site and to reflash it securely.

Best to have a format data/yes in twrp wipe section.
you can try without doing it, I don't know if format -w was efficient or not.
