I have been using HyperOS EU(v2.0.106.0) on my peridot since 2 weeks. The issue is with the system apps only, majorly with settings and the phone app while making calls.
Talking about the phone app, when I start a call, I get option to select sim(I use 2 sim cards) via a menu that comes in call ui. In this EU rom, there is around 2 second delay of ot comming, like it partially comes up, hangs for a sec or 2, then then fully shows, also it is jittery when showing up.

In the settings app, except a few option, all of them take a 2-3 sec to open up, there is a delay after I click of about 2-3 seconds and the next window opens, this is annoying.

There is also issue with the control center, then i swipe down to open control center, the animation of control center comming up is very much laggy and jittery. It comes up slowly, has lot of jitters........But there is no issue with the notification shade, only with the control center.

The issue with settings is not major one, but the phone app and control center are way too annoying. There is one more thing, I am not sure if it is an issue to be cncerned about, when I reboot the phone, the phone seems super laggy for about 2-3 minutes, and it gets too hot on reboot. This did not happen in the hyperos global rom(indian verison).

I agree with you on the part with being a bit laggy after rebooting and also the sliding down the control center sometimes is a bit sluggish. Unfortunately the devs do not own this device and cannot do much for that reason. Apart from that I had never issues with calls or any system apps.

I can understand that devs dont own the device, but maybe, just a suggestion that they could take feedback from those having this device and then improve the ROM based on it, something like a beta program before releasing the rom where they take feedback and work on it. I am not saying that they should, just giving out my opinion on something that they can do......
Sadly I dont have knowledge about the android development, so I could not fix these on my own......

We're not 14 years old, we have better things to do than to babysit people in a "beta program".
We deal with issues we can identify, and we don't bother with things that have nothing to do with our modifications.

You say that you dont bother with things that have nothing to do with your modifications, but I highly doubt that the issues I have told about are also there in the stock cn rom.....

Some issues happen regardless of our modifications. That's the nature of using custom ROMs.
Knowing whether they exist on stock ROMs or not doesn't help with fixing them.
