Hi,

To install Spanish on your phone, you could have asked the webshop where you purchased the device to install Spanish, or do it yourself. As you mentioned, this can only be done by installing the Xiaomi.eu ROM.

The play store can be installed without root though, go to the Mi Store, and search for Google, there's on Baidu an application that does the job for you.

It is a bit difficult to fully understand your message what you mean regarding TWRP, maybe you can rewrite your paragraph a little?

Twrp is not root, you don't need to reverse that.
Unlock boot loader. After permission from xiaomi, install twrp, then install rom with Spanish language. You don't have to root it.
