I have a xiaomi mi 11 and after various problems, I flashed the stable eu rom via fastboot, why between my devices and in the backups made now it detects it as pixel 2?

Because Google is using forced hardware attestation on newer devices so the workaround is to rename the model to pixel to pass SafetyNet

only a hint...

use e.g. a terminal and insert these commands as example
# getprop
# getprop | grep "Pixel 2"
# getprop | grep "Mi 11"

but if you dont know how to list props, it is better you dont try to edit it :)

unfortunately I would need a more detailed guide ...

The current SafetyNet workaround is on the framework level, nothing to see in props. He can't undo the workaround unless he knows smali and knows where to look.
