Question about xiaomi.eu and original xiaomi global

I'm sorry if I'm wrong to post here. I recently got the Mix 2s 6/128 with the global rom 10.0.2.0 (ODGMIFH) taken in the Italian store. Since I had this before Mi5s always with xiaomi.eu I would also like to pass this phone to this Rom.
I'm not happy with the global, no themes, no 5x6 layout, etc etc
But I wanted to ask if:
1) can we go back to the original GLOBAL version?
2) can you go back to the original recovery and block the bootloader as it was originally?
3) How does the Mi Mix 2s work with the EU? I assume it goes well like the one I had on the mi5s!

1) Yes
2) Yes
3) Honestly it works great with stable build (10.0.3.0), while the dev branch is still too young (based on Pie).

The one you linked is the one I am currently using. Really stable.
