Revert to stock rom and lock bootloader

Hello, i have a redmi note 11 with aosp rom and due to the increased difficulties in rooted phones i wanna revert to stock and lock the bootloader, os the xiaomi eu rom considered stock too? can i lock the bootloader with this rom installed?

xiaomi.eu is a custom ROM. You cannot lock the bootloader on it.
