On the Nexus One you can hit the settings and volume down key at the same time to take a screenshot. Try if this works on your phone as well.

That's the better way, because if you press volume first, you will see the notification on the screenshot

Pull down the status bar, scroll to the '...' toggle to customise the buttons, drag and drop the Screenshot toggle button onto the active side. Now you can take a screenshot any time by just pulling down the status bar and tapping the screenshot button.

You could also plug phone into computer via USB. Download Android SDK. Launch ./ddms and use its built in screen grabber.
