I liked the ability to get fully customized AOD through the theme store. My question is can I create my own AOD (fully customized not just adding a photo in the settings). ?

Yes. Make your own AOD theme (as an MTZ) and then import it like any other theme.

Nope. I don't know where you can find guides like that. Not to forget that AOD themes are exclusive to China region, which means finding a non-Chinese guide might not even be possible.
