Total Noob needs advice/help

Hi everyone. I am waiting delivery of the 12S Ultra in South Africa. Now I have tried watching multiple videos and reading multiple threads but I still have some concerns. Hopefully someone can guide/help me.

1. The phone comes with CN ROM stock, I have read about eu rom, what is this? Will I get updates automatically if I change to this rom or will have to upgrade manually?
2. Does the eu rom improve battery life and cameras?
3. What does not work with eu rom compared to what does on CN rom?
4. Which method of flashing is easiest and most secure?
5. I read something about 168hours somewhere. Is there a way to bypass that?

You should get (mostly) automatic updates, but you should be prepared for manual updates any time it is needed.

On the above-mentioned "current ROM is recovery", can you send me a link on the process I need to follow? Is it safe to say I am too lazy to read through 216 pages of forum thread.
