What The Last Ota Update On Servers?

Hello,

I bought redmi note 3 pro this week and got it from the seller with xiaomi.eu rom. The version is 7.2.5.0. And I know that there is exist 7.5 and even 8 version..
When I'm trying to update via updater application I'm getting that there is no update.

Should I receive soon message about an update?
I think that my bootloader is lock (icon of xiaomi with USB cable), so I can update manually from recovery..

I think you have an unofficial rom from seller, it's impossible to glash xiaomi eu rom without unlocking bootloader. I suggest you search how to flash official rom from xiaomi, unlock bootloader and then you can install twrp and every xiaomi eu rom you like, for now if you try to flash anything, you can seriously make phone unusable or worse.
