Latest/best way to root Mi 11 Ultra?

Not sure about the "latest and best", but the easiest is installing Magisk from TWRP. Just reboot to recovery, then click Advanced, and there should be an option there to "Install Magisk".

After you boot back up, use the Magisk app to continue the installation process and update. This worked great on my regular Mi 11 (Venus) so it should work on the Ultra too.
