eu rom is always based on latest china stable which is currently the 8.2.1.0.NAACNEB you can check it on en<dot>miui<dot>com/download-299.html after new china stable released it usally takes around a week or so for the EU ROM guys to release the new version here.

xiaomi.eu ROM has less chinese bloatware, less battery drain and native google play support theres some other minor changes, but thats the main differences i guess

i tried it just last week on a "Seat Ateca with" worked fine after granting some extra permissions in security app of MIUI. I have a Mi5 with 8.1.1.0 stable ROM Xiaomi models are not mentioned at all in their compatibility lists, but however it still works.. so i wouldnt give much about that lists.
