Check in Settings/System apps/Messaging.
If "Use GSM alphabet" is on, turn it off.

This solved this exact problem for my daughter's Redmi Note 4 running official Global Stable, and for similar problems (e.g., all emojis = blank) for a few other people on other phones I know of.
