I do not have access to GooglePlay while I need some apps that I bought in the past.
I also downloaded a zip-file (xiaomi.eu_multi_MIMAX_V10.2.1.0.NBCCNFK_v10-7.0.zip) from this website which I think is the European version of the software for the phone.
What do I have to do now? How do I install this software on the Xiaomi MiMax3?

Basically you have to unlock your bootloader, then fastboot flash a suitable TWRP, and then install the EU rom from within TWRP.
