I am currently using the miui 13.0.7 on my mi 11 lite 4g. But after installing using fastboot my phone became very slow and unresponsive.

It would heat up a lot, battery optimization is just bad lasting only half a day compared to 2 day on miui 12, and it would just randomly get stuck in between and the only way to fix it is to hard reboot it.

Is there any possibility for me to downgrade my phone to miui 12.5 ? If so how to do it?

Yes. If your device is unlocked, you can install the "latest official xiaomi 12.5 fastboot rom" for your device, using xiaomi flash tool. Make sure not to close the bootloader again. Select only: "clean all" then flash. DO NOT USE "clean all and lock" (be aware, this otion is pre-selected).

After that, you can install custom rom.

So can i just simply flash the 12.5 eu version using twrp just like i did before?

And also will my backup file still work with the older version?

Yes. Like that. After you have flashed the stock rom (and BL is still open), you can install TWRP and xiaomi.eu 12.5 like you did before.
Don't know about the backup files. Never tried that before.
