I have some apps, which are installed as system apps with the xiaomi.eu ROM, which I'd like to remove. As one example, I'd like to get rid of the original miui calendar, as I prefer to use the Google calendar app. Now 2 calendar apps are posting reminders ...

Is it possible to remove unwanted/unnecessary apps from the ROM before flashing it to the device? If yes, how would I do this? If the apps can't be easily removed, is it at least possible to hide or disable them? Maybe I missed it, but I didn't see a possibility to do so.

Miui apps are system apps, you can't remove them.

Open the zip file of the rom and delete the folders of the apps that you don’t want (system-> app or system->priv-app) and then flash the zip file.
 
When scanning the apps in the ROM I came across the Whetstone app. I remembered that some other users reported problems concerning this app. Therefore I'd like to know what this app is doing, what it is good for :)

Memory management. You can disable its function in settings-additional settings-developer options ... Turn off memory optimization to turn of miui ram manager and leave it to android to manage ram itself.
