Is update from old weekly update to new stable update without losing data possible ?

I'm on weekly update of xiaomi.eu_multi_MI11Pro_MI11Ultra_V14.0.23.4.25.DEV_v14-13.zip rom of Mi 11 ultra device (realesed on 28/4/2023) and i want to update to Stable version xiaomi.eu_multi_MI11Pro_MI11Ultra_V14.0.9.0.TKACNXM_v14-13.zip (realesed on 29/5/2023)

is that possible via fastboot without losing data ??

You can try it but I don't recommend it.
This is a downgrade and "Format Data" is required.

Weeklies can be months ahead of Stables, so 1 month difference does not necessarily mean anything.

Yes. Stable ROM is often more than 6 months behind weekly ROM. In some cases even longer.
