2- settings - additional settings - button and move shortcuts - I value the home key long press but it does not work for Google Assistant.

Settings / Manage apps
Click top right triple dot menu and select Default apps.
Here you set "google" as your preferred assistant.

Fixes it.

Like said above: Settings -> Manage apps -> (menu icon) -> Default apps -> Assist & voice input -> select "Google".

Same instructions as above... Also make sure "Launch Google Assistant" is set to "Long press the Home button" under Settings -> Additional settings -> Button and gesture shortcuts.

Works on Mi 6 fine here.
Try uninstalling Google app updates.
