I got my bootloader unlocked
Installed TWRP 3.3 from TWRP.me
I tried to install TWRP that comes with the post of stable releases, but it won't boot to TWRP menu

Also I installed MIUI 10.3.3 while running TWRP 3.3 and it wont boot, it stuck on "mi.com, powered by Android "

I went back to stock ROM.

Prior flashing xiaomi.eu I flashed latest Miui global stable version.
Did you tried that?
- Full flash of Global Miui version, check is is working, do not encrypt your phone
- flash the twrp
- wipe data
- flash xiaomi.eu

Can you try using a Windows 7 or Linux OS computer? I had troubles using windows 10 installing twrp.

Also, make sure that you have right ROM for your Mi 8, check to not be for Mi 8 SE or other Mi 8 version.

Maybe try a different twrp, deepblue2000 posted some twrp's in the Mi 8 section. They worked for me before, but now using the Mi 9
