So 4gb again ? With same rom to fix an issue...
Are we loosing settings and stuff if installed ?

There are no small OTA updates here, only Full ROM/OTA updates.
Of course you keep your settings and data when installing a ROM update. ^^

After ROM installation, you have to reinstall the "Magisk" zip file in TWRP to get root access again.

Magisk modules are not lost but depending of your installed Magisk module(s), your device may not boot after reinstalling the "Magisk" zip file:

Im still using the stock chinese rom as use the camera alot and the EU rom had an issue lowering the camera quality, is that still an issue or did they fix it ?

The EU guys don't mess with the camera, it's the same app. Why would they go to all that expense and trouble to create a different camera app? The only difference is that they have added language and support for the EU variant.
If you want to use and change core settings with the camera, I would download the compatible G_cam app and it's various xml settings to get the most out of the hardware.
