Can I return to Global (CN) after EU if I need to?

Currently running CN version of Global. I'm keen to try the EU version, and I realise I have to wipe data to move between stock and EU.

If EU doesn't work well for me, can I return to Global if I'm careful, and have no risk of bricking? Any other issues/risks going back to stock Global?

Your question it is not so clear for me. Is your phone a chinese version or a global one ?
Anyway if your MI phone is a real global version, you can back safety to official xiaomi global rom and lock bootloader. Just use official rom and miflashtool.
Same procedure if your mi phone is a chinese version, just use a chinese (CN) official rom.
 
Thanks. Mine is a real Global phone as far as I know, and it's great that I can try the EU ROM and go back if I need to - so thanks for clarifying that.
