Change from weekly to stable...??

But now I can't directly enter the recovery mode at all, how can I install twrp again? should i delete something to delete pbrp?
Boot your phone in Fastboot mode and use "fastboot flash recovery twrp.img" then "fastboot boot twrp.img" commands. ;)

After that, you can remove the "PBRP" folder at the root of internal storage of your device and that's all. :)

Hello again! I have installed the TWRP you told me, flashed the stable version of the Mi10T and I have the same problem, the new ROM does not start, it returns to the TWRP after the Redmi logo comes out ... I don't know what to do ... flash the ROM and then I did Format Data and Reboot System ...

I have followed the entire tutorial step by step, but at this point the phone starts up in the PBRP and I do Wipe / Advanced / Data and restart and again the Redmi logo appears and returns to the PBRP :(:(:(:(:(:(

1.9.6) Tap back on TWRP. Go to Reboot > Reboot to recovery.
Since we just "fastboot boot" the TWRP and not "fastboot flash", the TWRP was only temporary and now you're back in stock recovery.
1.9.7) This step is important. In stock recovery, > Wipe data. (Your phone won't boot without this step).

Yeah, you should start from scratch (= Flash any Official "fastboot" ROM via Mi Flash tool) then strictly follow this guide (= NEVER use "fastboot flash recovery twrp.img" command, only "fastboot boot twrp.img")... :(

IMPORTANT: Use @geoanto555's TWRP and not PBRP. ;)

Should I flash an official version? Oh God!!! I don't know how to do it ... I'm going crazy right now ... what's going to happen to the Bootloader?

The Bootloader will not be locked if you choose "Clean all" option in Mi Flash.
But try to "Format Data" again but in this TWRP => https://androidfilehost.com/?fid=7161016148664818579
I just installed the global one with MiFlash, now I will follow the manual step by step ... one more doubt, the following stable versions, how are they installed if I am not going to have TWRP? Will I have to erase all the data every time I install a new stable? Thank you

The guide is answering your questions (at the end of the guide). ;)

EDIT: In Xiaomi.eu ROMs, the Updater app puts the downloaded ROM in the root of the internal storage. :)
